Canada, 3rd March 2021: There are a few Indian Meat shop in Surrey that sell the country chickens, which are the native domesticated fowl which the local farmers breed on a small-scale basis in its natural environment. Most of them spend their time outdoors, scratching the dirt for worms and running around.
It means that the fowls with normal issues of growing up, including fighting for food, escaping from the predators, etc. The total activities manifest into the taste and texture of the bird. The meat is basically deep, has lower fat, and a complex flavor with higher muscle mass. Many people love the flavor of the country chicken as it is not commercially grown. But there are few issues like gamey birds, though that take a long time to cook.
The commercial chickens are raised exclusively for their meat in sterile and shielded environments with the controlled feed and controlled temperature. The birds get zero exercise, the same food, and the same exposure to the elements. They tend to be kind of Cornish hen. The commercially raised chickens spend their lives with hundreds of other chickens.
These fowls are high on fat and low on muscles, meaning their meat will be tender; they are a huge favorite in the countries as their meat is juicy. But as time passes, due to the unhealthy breeding conditions, they have a high risk of avian diseases due to inbreeding. Since the commercially raised chicken is slaughtered at a young age to produce the meat, they are fed with many antibiotics and pesticides, which indirectly affect the human bodies only. The hormones might have a big effect, possibly increasing the early-onset of puberty and risk of cancer.
Health benefits of country chicken against commercially raised chicken:
The country chickens pose fewer toxins as they are free foraging, so there are fewer to no health risks, whereas the commercially raised chicken is the vice-versa as they are injected hormones, known to create the risk of many diseases.
The country chicken also contains less fat and more muscles which is not the case for the commercials raised fowls. According to the American Culinary Federation, adding a little fat while cooking the organically raised chicken has a lower fat content.
The country chicken has a complex and tender flavor, whereas the commercially raised chicken has a fixed flavor.
