This recipe is easy to make with minimal ingredients and requires no special equipment. To coat the almonds, you can use milk chocolate, dark chocolate, or white chocolate. Nuts from the grocery store will never be the same again.
Ingredients
• 1/2 cup confectioners' sugar
• 1/2 cup Dutch cocoa powder
• 2 1/2 cups (13 ounces) whole almonds (raw, blanched or roasted)
• 1 teaspoon ground cinnamon
• 1 1/4 cups granulated sugar
• 1 pound chocolate, chopped
• Salt for garnish (optional)
Directions
• If using raw, unblanched almonds, you will first want to toast them. Turn the oven to 350°F and bake almonds on a baking sheet for 15 minutes. Line two baking pans with parchment paper; put aside.
• Combine 1/4 cup of water, granulated sugar, the toasted almonds, and cinnamon in a medium saucepan. Stirring constantly, cook until sugar is granular and golden, and the almonds are fully separated and coated. Place the nuts on prepared pans. Put in the freezer for approximately fifteen minutes.
• Place chocolate in a medium bowl over a pot of simmering water, ensuring the bowl doesn’t touch the water. Pour the chocolate over the nuts. Mix until nuts are well coated.
• Place nuts on a prepared baking pan. Use two forks to prevent them from sticking together. Place almonds in the refrigerator for twenty minutes until chocolate sets.
• In a bowl, combine confectioners' sugar and cocoa powder. Toss the nuts in the mixture and then, gently tap off any excess powder. If using, sprinkle with chunky salt.

Chocolate-coated almonds will last for two to three weeks if kept at room temperature in an airtight container. To prevent the chocolate coating from sticking together, place parchment paper between each layer.
Can I Freeze Chocolate Covered Almonds?
You can freeze chocolate-covered almonds for up to a month. However, condensation can form when the chocolate coating is removed from the freezer. The almonds will not look the same after coming out of the freezer.
You can also use this recipe to make chocolate almond butter. After toasting the almonds you will need to pour them into a food processor. Process until creamy, about 5-7 minutes, and then continue with the other steps for an excellent chocolate almond butter.
When preparing this recipe, ensure to always use fresh, unsalted almonds whenever possible. To get an excellent finished product, use high-quality nuts. You can also experiment with other flavors such as fruit extracts, honey or even chili for a unique snacking experience.
