Here is the explanation of Cajun and Creole history "Creole" that means anything from individuals who born in New Orleans area with French and Spanish ancestry to those who are descended from African/Caribbean/French/Spanish heritage.
 
While the others “Cajuns” are a group of people who are residing in southern Louisiana, this is the region which is rich with the history of several cultures. They are descended from the Acadians and French settlers from Atlantic Canada, now day’s Cajuns celebrate a diverse and vibrant culture unlike Creole.

But, Creoles in New Orleans area played an important role in the culture of the city. Creoles, like Cajuns, contributed so much to New Orleans history such as: art, music and social life; without Creoles, I think New Orleans wouldn't be the unique city in the history.

Mardi gras and festivals in New Orleans area starts officially on 6th of January, and runs until Fat Tuesday. In New Orleans area, Mardi gras celebrations are held for two weeks leading up to Fat Tuesday itself.

Mardi gras festivities begins on Epiphany, a Christian holiday celebrated on January 6 otherwise known as Three Kings Day or the Twelfth Day of Christmas.

Mardi gras and festivals in New Orleans area begins the 12th night after Christmas, Every year Carnival parade organizations are going deep into their preparations for their annual parades, different- different costume balls and parties. Where, fat Tuesday itself features with back-to-back processions by some of the largest and oldest Carnival organizations in the New Orleans.

Why does New Orleans celebrate Mardi gras?

Mardi gras are also known as Shrove Tuesday or Fat Tuesday and it is the day before Ash Wednesday that officially announces the start of Christian Lent season leading up to Easter. The name Fat Tuesday refers to the last day of having richer foods before the leaner days of Lent begin.

New Orleans throwing dozens of festivals through the year and honouring everything from pop music and po-boys to tomatoes and Tennessee Williams, where city offers visitors to enjoy and array of colourful festivities and events. Because, Mardi gras is the biggest celebration of the New Orleans. Festival is magnificent, costumed; beaded and feathered party which is laced with the tradition and it is all about having a good time! Mardi gras 2019 will host on Tuesday, it’s a March 5.
