The southeast region of China is the authentic home of jasmine tea with a seasonal climate, fertile soil and high mountain ranges, which produce some of the best jasmine scented green teas on the market today. The hedgerows of tea bushes include Fuding Da Bai Hao cultivar, which is a native tea bush, cultivated for its flavoured buds. The young leaves and buds are handpicked in the early spring, making a great green tea.

Once picked, the tea leaves are processed in a factory, carefully laid on bamboo mats, allowing them to wither naturally. This enables any moisture to evaporate, helping the leaves become supple enough that they can be worked with. When they are withered, they are heated to stop any oxidation, which allows the buds to keep their silver colouration, locking in the natural green of the leaves. With the right heating, they get the best flavour, which is sweet, smooth and slightly grassy.

Once the tea leaves have been left to dry, they are sorted with broken stems and leaves removed, ensuring a uniform shape and size of leaf. The leaves are then carefully rolled into pearls. Each of the pearls are rolled by hand to perfection by masters. Taking a pinch of tea leaves and rolling them into a ball shape, they are then tied with cotton, helping them maintain their shape.
