Chicken shawarma in Hamilton is a Mideastern dish that is commonly found in the streets. You can see food stalls with vertical rotisseries.

Piles and piles of meat are then placed in the skewer and then rotated to roast evenly. After that, they will be carved out and then stuffed in pita bread along with slices of vegetables like cucumber, tomatoes, and lettuce.
There are many different variations of chicken shawarma in Hamilton. The best shawarma in Hamilton can be found in restaurants like Pita Land. But if you want to make it at home, you can also do so even without a vertical rotisserie.

The first thing you should do is prepare your ingredients. Now you are going to need chicken thighs, preferably the boneless and skinless variety. It will come out juicier than chicken breast and it’s also beginner-friendly. If you accidentally overcook it, you don’t have to worry that it will end up too dry.

You are also going to need to assemble your ingredients for the marinade. You need lemon juice, olive oil, garlic, cumin, paprika, turmeric, cinnamon, pepper, and salt. Mix all these together in a Ziploc bag and then put your chicken thigh in. Mix it well so that the chicken thighs are all coated in the marinade. Leave it in the fridge to marinade for at least 30 minutes. You can also do this in advance at night so that it has all night to sit in the marinade. The meat will come out more delicious.

Prepare your garlic sauce. Just combine minced garlic with Greek yogurt. Add a bit of mayo and lemon juice. Adjust the measurements of the ingredients to suit your taste.

Chop your vegetables. Thinly slice onions, tomatoes, and lettuce. You can also add parsley for more color.
Bake, grill, or roast the marinated chicken. Once done, let it rest for a bit to allow the juices to redistribute. This will prevent the juice from oozing out when you cut into the meat. Cook your pita bread and then put the sliced chicken on it along with the vegetables you chopped. Drizzle a generous amount of the sauce. Now you have homemade shawarma!

What is great about this is that you can make the ingredients in advance. So, if you are busy and you don’t have time for a complicated meal that takes hours to cook, give this a try. You can cook a big batch of meat and just reheat it. Assemble the pita when needed.
